Gervasi Destinations Previews Menu and Look of Upcoming Restaurant

Shareable plates, creative sandwiches, unique entrees and a sushi and raw bar will all be part of Olinda, the upcoming restaurant from Gervasi Vineyard coming to Jackson Township in 2026. It will be the second stand-along restaurant for Gervasi Destinations, which also operates the Italian American restaurant The Twisted Olive in Green. 

Gervasi Destinations shared a preview of the food and interior aesthetic in an Oct. 16, 2025, press release. Patrons will be greeted by blue-velvet upholstered chairs and booths, blue and black tiles and a blue tile feature that will serve as a centerpiece of the remodeled space that is expected to open at 7160 Fulton Dr. NW sometime in the new year (no specific date has yet be set). 

“We’re excited to bring Olinda to life and can’t wait for our guests to experience the vision we’ve been building,” Scott Swaldo, Gervasi Destinations’ CEO and general manager, said in the Oct. 16, 2025 press release. “From the design to the cuisine, every detail is intended to create something truly special for our visitors.”

Olinda also shared a sample of what patrons can expect from the food menu, which will spans creative entrees and handhelds as well as sushi and a raw bar. (The restaurant shared preview photographs of some of the dishes with the Oct. 16, 2025 release but not the names of specific menu items.)

The announcement also announced Alberto “Bert” Rodriguez as executive sous chef at Olinda. Rodriguez, a chef who has grown with Gervasi Destinations, brings his creativity and a passion for culinary innovation to achieve the new restaurant’s aim of bringing people together over bold flavors and fresh ideas. A weekend brunch menu will be part of Olinda’s offerings as well.
