Welcome to the Hocking Hills Quiche

Enjoy this dish after a morning or afternoon of hiking in the beautiful Hocking Hills.

INGREDIENTS
1 package ready-made refrigerated (not frozen) pie crusts
12 slices bacon, crispy fried and crumbled
1/3 cup finely chopped onion
4 ounces Swiss cheese, shredded
4 eggs
1 cup half & half
1 cup heavy whipping cream
1/2 teaspoon salt
1/4 teaspoon white pepper
1/8 teaspoon ground red pepper (cayenne)


DIRECTIONS
Preheat oven to 425 degrees.

Unroll one pie shell into a 9-inch pie plate. Sprinkle crumbled bacon, onion and cheese over pie shell.
Combine eggs, half & half, cream, salt, pepper and red pepper in bowl with hand mixer. Pour egg mixture into pie plate.

Bake uncovered in oven for 15 minutes. Reduce heat to 300 degrees and continue to bake for 30 to 40 minutes or until a knife inserted in center comes out clean. Let stand 10 minutes before serving.

Variations: Replace bacon and Swiss cheese with diced ham, spinach and white cheddar; or diced artichoke hearts, spinach, gruyere, Swiss and white cheddar cheese. The possibilities are endless.
