Maple Roasted Asparagus

A favorite spring vegetable, asparagus can be prepared in a variety of ways, including this sweet and zesty version from Akron's Mustard Seed Markets.
Maple Roasted Asparagus

INGREDIENTS

1 pound asparagus
2 tablespoons extra virgin olive oil
Sea salt
Black pepper, freshly ground
1/4 cup maple syrup
1 organic lemon, juiced and zested

DIRECTIONS

Prepare your outdoor grill with mesquite wood.
Wash asparagus, trim ends. Brush asparagus with olive oil. Salt and pepper to taste. Mix maple syrup and lemon juice. Lightly roast asparagus over fire and baste with lemon/maple syrup mixture. Remove from grill when tender. Garnish with lemon zest to taste.
